racemized protein

protein so changed by chemical or other agents, usually dilute alkali, that its optical activity is lowered and it becomes more resistant to enzymatic hydrolysis. Acid hydrolysis of a racemized protein shows inactivation (racemization) of several of its constituent amino acids.
