Sorbitol or sorbose and related compounds in ester combination with fatty acid s and with short oligo (ethylene oxide) side chains and an oleate terminus to form detergents such as polysorbate 80.

sor·bi·tan (sorґbĭ-tən) a generic name for an anhydride of sorbitol, whose fatty acids are surfactants (s. monolaurate [NF], s. monooleate [NF], s. monopalmitate [NF], s. monostearate [NF], s. sesquioleate [NF], s. trioleate [NF], s. tristearate) used as emulsifiers in pharmaceutical preparations. See also polysorbate. Called also sorbitol anhydride.
