the changes in the physical and physiological properties of a protein that are brought about by heat, X-rays, or chemicals. These changes include loss of activity (in the case of enzymes) and loss (or alteration) of antigenicity (in the case of antigen).

de·na·tur·a·tion (de-na″chər-aґshən) the destruction of the usual nature of a substance, as the addition of methanol or acetone to alcohol to render it unfit for drinking, or the change in the physical properties of a substance, such as a protein or nucleic acid, caused by heat or certain chemicals that alter tertiary structure.
