(for celiac disease) cellobiose and mannitol are administered and their relative degrees of absorption are compared. Because of the relative permeability of the intestine to large molecules like cellobiose and small ones like mannitol, in celiac disease there is greater absorption of cellobiose and less absorption of mannitol.
