- β-car·o·tene 15,15ґ-mono·oxy·gen·ase (karґo-tēn mon″o-okґsĭ-jən-ās) [EC 1.14.99.36] an enzyme of the oxidoreductase class that catalyzes the oxidative cleavage of β-carotene in the intestinal mucosa, forming two molecules of all-trans retinal in a reaction requiring bile salts and iron.
