- [EC 3.2.1.1] an endoamylase catalyzing the hydrolysis of internal α-1,4-glucosidic linkages in polysaccharides that contain three or more glucose residues, yielding a mixture of linear and branched oligosaccharides. The enzyme is secreted by the salivary glands and pancreas of mammals.
