Saccharomyces
A genus of budding yeasts (family Saccharomycetaceae); an ascomycete. S. cerevisiae is used to produce brewer's yeast and ethanol. S. cerevisiae is a very rare pathogen in humans. [saccharo- + G. mykes, fungus]
