Polyhydroxy alcohol; a sugar that contains many —OH (-ol) groups, such as the sugar alcohol s and inositols.
- p. dehydrogenases oxidizing enzymes that catalyze the dehydrogenation of sugar alcohol s to monosaccharides (in EC class 1.1), e.g., l-iditol dehydrogenase and aldose reductase.
