melt·ing (melґting) 1. undergoing or causing to undergo the transition from solid to liquid, as by the application of heat or pressure. 2. in molecular biology, the disruption of secondary structure in molecules or parts of molecules, such as the heat-induced general or localized separation of a double-stranded nucleic acid to form a single-stranded molecule or region.
